How can I find out if they have my new bank and address information from my 2020 tax return and not going to use my 2019 info?

If your 2020 tax return has been filed and accepted the IRS will use the most recent return information to release any refund or stimulus you may have coming.  They would not normally go back to a previous return.  People change addresses and banks so it's highly unlikely they will look beyond the 2020 tax return that has been filed and accepted.
