I am looking at my 2018 tax return how do I see what jobs I claimed

The individual employers are not on your tax return. Only the total amount you earned is on your Form 1040. Look through the worksheets that are part of the pdf of the return to see information about the employers. You are supposed to save your own W-2's for your records and keep records yourself of who you have worked for.
