I amended my return to say that I will be claimed as a dependent, but have already received my refund check. How do I know if I can cash the refund from my original return?

You can cash the refund check, regardless of if you filed an amendment. When you filed the amendment, your amount could have changed. If it changed to a negative amount, the IRS will expect you to pay back some of the money, which you can do with funds from the original check. If it changed to a positive amount, the IRS will send you another check with the difference. If the amount stayed the same and the only change was your dependent status, then nothing changed with your amount and the check is correct.
