I just found a document that has student loan interest paid from 2015. How can I find out if this information was filed correctly from 2015?

You would have to look at your 2015 tax return to see if you used the student loan interest as a deduction on the return. But it's moot, since it is too late to amend if you forgot to use it on the 2015 return. You are past the deadline to amend a 2015 return to get an additional refund.
