My 2020 taxes never accepted my son because of a SSN error. So I amended my 2020 taxes and my AGI changed with a couple other things, so does that mean I have to amend my 2021 taxes with my new adjusted AGI??

No you don't need to amend because the 2020 AGI changed.  But what did you change on 2020?  It may affect   2021.

BUT wait,  If you never filed 2020 you do not amend.  You still need to file an original return.   And was your 2021 return Accepted?  Or did it reject because of the 2020 AGI?

When I filed my 2020 year taxes, somewhere a error was made and my daughters SSN was put understand my son's SSN as well and without realizing it til now, my son was never claimed so I had to amend my 2020 year taxes. Which changed my AGI some, which also ment the stimulus for him was never credited either. Which now says it should be fixed, but that also means the CTC was wrong which I was supposed to get 6,000 for both my children, and the letter I got saying the advanced payments I was only receiving for my daughter. Which I opted out with my wife, so I could get the whole payment instead of it being split up. So is there anything else I should do?

As for my 2021 year taxes they have already been filed and everything went through smooth and I already received my refund back on Mar. 2nd. Just wanted to make sure nothing from my 2020 year taxes was going to mess with my 2021 year taxes.
