If I mistakenly overrode amounts reported in Form 8949 Part II (the amounts reported in my 1099B's are correct) will Form 8949 be "recreated" were I to delete it?

You will not be able to delete the Form 8949 without first deleting the investment sales that generated the form. If you delete the investments sales that are listed on the Form 8949, then that form should be deleted automatically as well. Then you can reenter the investments sales and the form will populate based on the new investment sale entries.
