If I received the 3rd stim check between march and may '21 would I have gotten a letter more recently for it from the irs?

You should have received letter 6475 from the IRS. But even if you did not receive the letter, when you are asked in the recovery rebate credit section if you received the 3rd EIP payment you must enter the amount you received. Answering incorrectly will delay your refund --- the IRS knows how much they sent you and you cannot get it twice. If you are not sure how much you received then check your bank records for deposits of $1400 per person or check your online account with the IRS.
