If I save my incomplete return, then add some items, can I revert to my 'saved' version of the return?

It depends. If you are using TurboTax Desktop, you can save your incomplete return, then add some items, and then revert to the saved version of the return.
However, if you are using TurboTax Online, it saves your entries automatically as you go, so that would not be an option.
