Is it possible to access at a later date the supporting documents I used to complete my tax return? Will the past supporting documents of past years as well?

What do you mean by "supporting documents"  ?   if you mean the worksheets that are part of the pdf you saved with your tax file, yes, you will be able to see them.   But if by "documents" you mean W-2's, 1099's, 1098's, etc.  TurboTax will not have images of those.  You have to save those documents yourself.

I wish one day they could also save these supporting documents! If we are trusting Intuit to be secure to file our taxes, surely they are secure enough to retain the supporting information as well.

Think about this----many of those documents are on paper that you had in front of you as you prepared your return and keyed in the information.  How do you expect the software to have copies?  You could keep your tax documents in a filing cabinet, a dresser drawer, or whatever yourself.  Or you can scan them and save them on your own hard drive and/or on a flash drive if you do not want to save hard copies.
