Should I file my return and then amend it later, or file an extension, if I am not sure whether I will get a K-1 for my father's estate?

In general, it is better to file an extension if you know you are not filing a complete return instead of filing a false return and then amending it.
 

However, do you have taxable income from your fathers estate?  If not, then you may not get a K-1.  You may want to talk to the attorney or whoever is handing the estate to find out if you will be getting a K-1 and then you can decide if you should file your taxes now or wait until you get the K-1.
