Can you use a LLC EIN if your an independent contractor working at a salon?

If your an independent contractor and get hired by a business like a salon, could you use either a sole proprietorship EIN or LLC EIN instead of your SSN?

Of course ... using the  EIN is a good way to not have to give out your SS# to the payer.
