Question

Paid as an independent contractor but not self-employed

I do childcare at a church, am paid and receive a 1099-MISC if over $600.  I do not consider myself self-employed as I do this for extra money.  The childcare is once a week for about 8 weeks at a time, 2-3 times a year.  The church considers us independent contractors.  They've offered to pay us extra to cover the taxes but that will just increase income and the tax will increase also, correct?  I have a full-time job and a part-time job which deduct taxes.

You are performing a service for compensation.  The church should be issuing a 1099-NEC.  This is self-employment income to you.
