What does SE125 stand for in Box 14 and how do I determine which category it falls under?

This is on form W2.

This code reflects the total of your "cafeteria plan" benefits.  These are the benefits that offer you the option of pre-tax or after-tax options that do not cause a future taxable benefit.  This is not a required entry for your tax returns, but an informational box for your benefit.  You can enter it as Other for box 14 or you can not enter it, whichever you choose.

You would have to ask your employer what the SE125 means on the W-2.  Otherwise in the dropdown for the box 14 category scroll to the bottom of the list and use Other (not classified)
