It depends.

Were you on a business trip when you ended up having to stay in the hotel in quarantine or was it part of the requirements to fulfill your business duties?

If it was under the requirements to work in your business, you could deduct them as a business expense. But I would recommend keeping records to document the requirement to quarantine by the company hired by you so you have support for your business expense.
