Can I claim my 29y/o son, even if he pays taxes? I paid for a car, car insurance, taxes for this as well. He uses my credit card for food, gasoline, hotel rooms?

If your son had over $4300 of income (not counting Social Security) in 2021 then no, you cannot claim him.  He is too old to be a qualifying child and made too much to be a qualifying relative.
