How do I add my son to get EIC, he is not considered dependent but meets all requirements for EIC?

You start off by entering your son the same as if he were a dependent. In the course of the dependent interview, as Hal_Al said in his comment, it will ask you the necessary questions to determine that he is not a dependent. When you finish entering him it will tell you that you cannot claim him as a dependent but might be able to use him for EIC.

Why is he not considered a dependent?
There are only a couple of situations where you can claim EIC, when he is not a dependent* and the Turbotax interview automatically handles them.

*1. When the non custodial parent is claiming him as a dependent
 2. He meets all the Qualifying Child rules except the self support rule
