If I have cash donations made to my 501.3c for Missionary Work. Do I have to claim this as income if I only use it for reimbursables.

There are a couple of points to address. If  it is not your own 501.3c, then maybe. If someone gives you money as a gift, then it is not taxable. If you are performing labor in exchange for the money, then it is self-employment income.

 

If it is your 501.3c, then it should be paying for any expenses. You should not be paying out of your own pocket and then being reimbursed. You can't treat the money as if it were yours and co-mingle funds. However, a reimbursement is not income.
