Is it OK to claim all 8 donations or should I stop at $500?

I donated non-cash contributions to 3 different charities. I donated on 8 different days. Each days donation was under $250. All 8 days contributions totaled a little over $1000. I have receipts for most of these donations (except the places where there was no attendant to give receipt. The receipts I did get are from goodwill that acknowledge how many pieces or how many boxes they received from me. I have an itemized list of what was in each box and I valued it all at thrift shop values.

You can list all your donations.  Turbotax will create the necessary forms.  Extra signatures are not required on those forms unless the value of a donation of a single item or "group of similar items" is more than $5000.

A suggestion for the future though -- take your itemized list to the charity and have someone sign your list along with giving you a receipt, to show that what is on your list actually matches what was donated.  There are some reports of IRS auditors requiring this, even though it is not stated specifically in publication 526.
