My girlfriend and I both are named on our mortgage. Can one of us take the full amounts on the tax statement so that person qualifies for itemized deductions?

You can each deduct the amount that you paid.  You cannot deduct what someone else paid.   If the IRS questions it you will need to produce checks or bank statements that what you claimed was paid by you.
