Question

What expenses related to being burned out of my home by a fire can I deduct? I had to stay in AirBnBs and I did a partial move out and back in.

(Could this count as a "disaster" of some kind? The damage to our building was due to arson.)

So sorry for your dreadful fire-related expenses.   But unless you were in an area that has been declared a federal disaster area--such as a wildfire area, you cannot deduct anything for the fire on your federal return.   When the tax laws changed for 2018 and beyond, casualty and theft losses were eliminated as a federal deduction unless you are in a disaster area.

Hope you filed an insurance claim.  But your state may allow something on the state return.
