I have already submitted my return and it was accepted by IRS. I recently got a corrected 1099-T, How do I amend my return. Do I simply delete the first one? or leave it and enter the corrected one?

First of all determine if the corrected 1098-T makes a difference on your tax return.  If not, it does not need to be filed. It is only an informational document.

If it does make a difference, in the refund you get or the tax you pay,  you will need to file an amended return.  It may be as simple as changes the numbers at the 1098-T screen, after selecting amend.
