Question

If I only went to college for 1 semester in 2020 but stopped going completely mid semester and didn't officially dropout, would i still be counted as a full time student?

No, you would not be considered a full-time student.

Normally, you are a full-time student if you are enrolled and attending school for at least five months, however every school defines a full-time student in their own way. To be sure, you should check with your school’s registrar’s office.

According to IRS you are a full-time student if you are enrolled at a school for the number of hours or classes that your school considers full time. You must be full-time for some part of each of 5 calendar months during the year. (The months need not be consecutive).
