If my dad is claiming me as a dependent, do I still do education expenses/deductions? I have a 529 plan, but my grandfather is the one putting money in it.

No, you do not enter education expenses since you are filing as a dependent.

since you are the dependent / student you DAD must file the 1098-T form.  

 

on the 529 plan, while you grandfather may be funding it, the critical question is when the money was distributed where did it DIRECTLY go?  that is who is responsible for reporting the 1099-Q form. if the 529 plan trustee sent the money directly to the college or you, you are required to file the form (and your income may be low enough that there is no filing requirement in  any event).  if the money went to your dad who then sent the money to the college, then his SS# is on the form and he is responsible for filing it.
