I am a music student and purchased a cello, bow, and case for my college career costing over 7k. I receive financial aid but bought it with my own money. Would I also be able to list my sheet music books I bought for school?

Yes.  You can deduct the cost of your musical instrument and music sheet books if they are required for the class.
