Can I pay my NY state taxes in installments?

how can I set this up? I am about to file them here but it doesnt show up as an option.

That's correct because you can't setup installment payment plans with any DIY tax software for Federal or State taxes.

You'll find information for setting up a payment plan with New York, at the following link: https://www.tax.ny.gov/pay/all/ipa.htm

You'll see options to request the plan online or call to set it up. Some states require you to wait until you receive a bill, but NY doesn't specifically state that although it looks like you'll need a bill to call in a request (so try the online request first to set it up before getting a bill).
