Can someone please explain why the IRS has not yet even acknowledged my tax returns and it has been over 48 hours? Should I be calling someone?

No, there is no need to worry or call.

The IRS was swamped with returns near the filing deadline and it is taking longer for acceptances to appear.

The IRS was behind from the beginning due to the shutdown and the new tax laws, so everything is taking longer this tax season.

If you have not received an email of acceptance by the end of the week, I would check your spam folder for information about a rejection.
