Divorced early 2018, should my ex wife start over with filing her taxes or can she take over mine and remove my info as I won't be filing?

There are a number of technical issues that can occur, either with TurboTax or with the IRS, if your ex tries to reuse your account. Your ex should start from scratch with a new account. Any information that would have been transferred can also be typed in manually.

You should *both* start over with a completely new tax return, not importing anything from your 2017 joint return. If you do import, then I can practically guarantee you it will be wrong and you will have issues with the IRS (as well as your state if your state taxes personal income).
What you both need to do is print out a copy of your 2017 joint return so that you each have a copy to get information from, when the 2018 program asks you for it. Do note that if only one of you has access to the 2017 joint return and you refuse to provide it to the other, then that can be (and will be depending on how "amicable" the divorce was) viewed as a criminal act. So one should not withhold a copy of the 2017 tax return from the other.

"....as I won't be filing..."  Why will you not be filing a tax return for 2018?  What was the source of your own income for 2018?  It sounds like you have filed in the past.

Only income is ssi as I am unable to work due to my health condition.

If you used Turbo Tax last year you should start a brand new account for each of you and not transfer from last year.  Online is only good for 1 return.  But you can use the same email address for 5 accounts.   How to start another return in the Online version      https://ttlc.intuit.com/replies/3288574
