I carry health insurance for my child under the age of 26 who does not qualify as a dependent, therefore, files their own taxes. How does this information reflect on their tax forms, to avoid the healthcare penalty?

Your child simply indicates on the tax return that they had Minimum Essential Coverage all year and no penalty will apply.  Health insurance companies file the 1095-A , 1095-B, or 1095-C with the IRS.  Each covered person is matched with their tax returns (via computer database) to check if what the taxpayer enters is correct.
