I filed a 1040 in prior years when I had itemized deductions. Now I am simply taking the Standard deduction. Do I still have to file a 1040 or can I use the 1040 EZ?

No. Tax Reform has eliminated Forms 1040 EZ and 1040 A and replaced them with a simplified Form 1040.
