I filed for unemployment in 2020 but didn't receive any payments until 2021 due to an issue being resolved, should I claim my unemployment on my 2020 taxes?

No, you should not claim the unemployment on the 2020 tax return.  if you did not receive the unemployment until 2021, you will receive the 1099-G next year.
