Question

I recently had a baby February 7th, 2021.. is there anyway I can add her to my tax returns to receive stimulus benefits?

No.  The child can only be entered as a dependent on the 2021 tax return to be filed next year.  You will also be able to get the stimulus payment for your dependent child on the 2021 tax return.
