If I mail in my return, how long should it take for them to accept it and how will I know if they do or not?

You do not receive any information with a mailed in return whether it is accepted or not.  The IRS is not currently able to process individual paper tax returns. If you already have filed via paper but it has not yet been processed, do not file a second tax return or write to the IRS to inquire about the status of your return or your economic impact payment. Paper returns will be processed   once processing centers are able to reopen. This year, more than 90% of taxpayers have filed electronically.

It depends.

The IRS has limited operations and is not processing paper-filed returns at the moment.

The return will be processed once the processing centers are allowed to re-open.

However, be aware this will cause a delay in the timeline for processing your return if you choose to mail it in.

Attached is a link with more information as to what departments are available to contact at the moment.
