If my 26 y/o dependent worked in 2019 but didn't make enough income to file on her own, how do I enter her income and W-2 on my 1040?

You cannot claim anyone else's income on your tax return (other than your spouse if married filing joint).  If your 26 year old "dependent" is not required to file due to not earning enough, but had tax withheld from pay, he/she should file a return anyway in order to receive a refund.
