Is it possible to change my filing status/exemption number for my 2018 return? In 2018 my W-4 profile was set for 2 Exemptions/Allowances, and I believe because of that my employer did not withhold

Too late to change your withholding for 2018.  2018 is over.  What’s done is done.  You can just change it going forward.  Give your employer a new W4.  What you claim at work doesn’t have to match your tax return number of people.

For 2018 if you didn’t have enough withholding taken out you will owe the difference on your return.

@VolvoGirl thank you. I wasn’t sure if by changing my exemptions from a 2 to a 1 I would owe less taxes for the year and thus wouldn’t have a difference to have to pay now. Thank you very much for the help.
