There are a couple of credit card processing companies I worked with for a while (Stripe and PayPal), which didn't send me a 1099 and won't be because I didn't reach the "thresh hold" required for them to do so.  Am I still required to report that income, and if so, where on Turbo Tax do I do that?

All worldwide income must be reported. I am assuming you have a business and would enter all these forms on your Sch C. The cash income will be added under General Income. The description for the additional income can be simply cash or whatever you like to describe it. Enter the amount and continue on.
