Should I list my current occupation (it changed in January 2019) or should I list my former job from 2018?

It would make more sense to use the occupation you had in 2018 on your 2018 tax return, although the IRS really does not care.  They only use "occupation" for statistical purposes.  It has no effect at all on your tax return.
