The software isn't allowing me to file as Head of Household, even thought I entered a dependent, claimed to pay for more than 50% of all expenses, etc.

Who is your dependent?   It cannot be a GF or BF or a child of a GF or BF that is not your bio-child.

If you qualify as Head of Household, when you enter your marital status (single or married filing separately) into MyInfo, and then enter your qualifying dependent, TurboTax will offer HOH as your filing status.

If the dependent on your tax return is Not related to you then you cannot be eligible for Head of Household.
