When asked, When did you start using this home office for work, do I enter the date of the beginning of the year. For instance, filing 2022 taxes, do I put 01/01/2022?

You should enter the specific date you actually started using your home office.  If you started using your home office in 2016 and have used it consistently every year, that is the date you will enter.  Only enter a 2022 date if you started using it in 2022.
