As a Rideshare Driver, I rented different vehicles from different car rental companies. Can I deduct the full amount and list it from each car rental company or do I have to write the amount for each

vehicle and the company?

You can group the expenses together by rental company, just keep receipts with your tax file and try to file in a similar fashion year to year.
