If I rented 11/12 months, and lived with my parents for one month, how do I enter that for the Homeowner or Renter and subsequent months there?

In the State tax section, it asks me to "Check the appropriate boxes and enter the months for the situations that apply to you. Make sure the months total 12." Options are Homeowner- months lived in a home, renter - heat included and renter - heat not included.

That appears to be for the Homestead Credit. You can enter the 11 months of rent in the appropriate box as long as the total number of months doesn't exceed 12 you will be good.
