For my Timber Sale, I select the 1099-S in the investment window, but it changes it to a 1099-B when I am finished. Is there a way to force the 1099-S?

    It is correct that it shows as a 1099-B.   There is not a designated 1099-S entry in TurboTax.   Home sales (and timber sales) are considered investment sales for tax purposes.  And investment sales are reported on 1099-B.   So any home sale (or timber sale) reported on 1099-S will show an an investment sale (1099-B) in TurboTax.   Timber Sale Entry
