I'm retired but I keep my professional licensure and associations current. Should I list my profession or list retired as occupation?

If I say "retired" will I be able to deduct my professional licensure and continuing ed I do to maintain it?

It's not important what you enter for occupation. It doesn't affect what you can deduct, or anything else on your tax return. I would suggest that you say "Retired."
