So I was able to get my total into the Schedule C, doing it the way you described, however it won’t let me add in any of my expenses… I am able to pick categories like supplies, but there is nowhere to actually put in dollar amounts. Any insight into that? I was able to do that when I was trying to report my Rover income via a 1099-k.

What version are you using?  You can enter 1099NEC or cash Self Employment Income into Online Deluxe  but if you have any expenses you will have to upgrade to the Premium version.

We are asking for the EIN number of the company who issued you the 1099-K.    It is at the top and it will say Filer's TIN.   You are the payee.  See highlight in the image below.

If I was actually issued a form 1099-K I would know where to find that EIN number. However I am reporting my income from working through Rover and will not be issued a form 1099-K. I have to report my earnings through a Schedule C form, which I can’t seem to find unless I report it via a form 1099-K in the app.

Actually I would just enter your total income as Other self employment income or as Cash or General income.  You don't need to get a 1099NEC or 1099Misc or 1099K.  Even if you did you can enter all your income as Cash.  Only the total goes to schedule C.
