Hello - I run an online training business for marksmanship and police training. I am wondering where to add my consumables, such as ammunition, into my business expenses?

It looks like there is a field to add expenses for "Fuel for machinery" but I don't believe this would fit.

You can include expenses not on the list as other expenses. It is important, however, to keep receipts of any purchases with basic information to report to the Canada Revenue Agency (CRA) if they request it.
