Question

I filed my state (North Carolina) tax return on March 1. I owe North Carolina. When they will actually withdraw the tax owed from my bank account?

Unless you gave a specific date, it happens on the due date (April 15, or as extended).

Did you print out or save a copy of your tax file to a PDF, as the software instructed you to do just before you e-filed?  That information is on the instruction sheet .... looks like the following (screenshot is from 2019, but 2020 looks similar):
