Question

I received both of my stimulus checks in 2020, but when I filed my 2020 taxes the full amount that I received in stimulus checks were taken out of my refunds. Why?

I entered all my information for my 2020 taxes except the stimulus checks. When I entered the amount I received in stimulus checks my refund amounts went down by the exact amount that my stimulus checks were. I was told that the stimulus checks would not affect my refund amount. So why did my refund amount change the second I put in my stimulus check amounts?

You are correct, your stimulus payments are not taxable, so they will not affect your refund unless you did not receive all of your payments, in which case the amount due you would be added to your refund.

What probably happened is that your tax return showed your stimulus payments being added to your refund when you started your tax return, so when you entered the amount that you received, it reduced your refund by the amount of the payments that were then removed form your refund.
