I've been working remotely all over the U.S. in 2021. I'm originally from New York and my mom lives there so I put my address there for paperwork but I haven't been physically in the state for more than 5 months this year. Where should I put my state of residence for the year?

Your state of residence is home to: your car is registered, you vote, your driver's license, bank accounts, you intend to return there when done traveling. If you left NY and haven't changed anything, you are a NY resident and nonresident for the other states. If you changed everything with an intent to live elsewhere, that would be a part year residency for each state.
