If I just moved to Illinois for college in 2021, and got a job at my school, is my state of residence Illinois or my home state Texas?

It depends on whether or not this is temporary and if you still consider your parent's home to be your home. Plus, each state has its own rules that cover residency.

 

The majority of states have what's called a 183-day rule, which basically means the state will tax you as a resident if you own a home there and spend at least 183 days during the year (basically, six months) in the state.
