Probably since you are not commissioned as an officer yet. Cadets have historically been allowed to select rank as an enlisted person, in order to get use of Online TTX software for free.
.....and if you get bumped out at the 2nd or 1st class stage (Jr and Sr) before graduating, you end up having to commit to serve in enlisted ranks to cover your required service time.

You'll select E-5, as that's the standard pay grade for a cadet at military academies such as West Point.
I don't know if cadets get the same type of LES as active/enlisted do. But if you do, then looking at it from the top left, the third box over is "Grade", and that's your paygrade. Again, I would expect it to be E-5.
